Here in Hawaii, Costco rotisserie chicken is one of the best values on the island! It is delicious, keto-friendly, and inexpensive. After the first meal, you can use the leftover chicken for all kinds of things.
Chicken on a Salad
I love to use rotisserie chicken on a salad. It tastes very fancy and delicious! Build a beautiful tossed salad with romaine lettuce, strips of colored bell peppers, sliced beets, cherry tomatoes, green onion snips, and hunks of rotisserie chicken! Top with your favorite salad dressing or drizzle with olive oil.
Pesto Chicken Wraps
Use chunks of leftover rotisserie chicken heated with pesto (I used Costco pesto) in lettuce wraps. Serve with dipping veggies and ranch dressing.
Mix chunks of leftover rotisserie chicken with mayo, a little pickle relish, and dill weed. For a fine, spread-like consistency, blend ingredients in a food processor. For a more chunky texture, mix it all up with a fork. Chicken salad can be served as a lettuce wrap or in a leaf of romaine lettuce.
Mix 8 oz cream cheese (at room temperature), 1/4 cup of ranch dressing, and 1/4 cup of your favorite buffalo sauce with leftover chunks of rotisserie chicken. Flake and mix with a fork, or puree in a food processor. Serve as a dip for veggies, mounded and chilled on top of boiled egg slices, or in leafs of romaine lettuce. Delicious!
Chicken Fajitas or Tacos
Saute chunks of leftover rotisserie chicken in a skillet with olive oil, strips of bell pepper, and onion. Add cumin, chili powder, and garlic (minced, or use garlic powder). Serve as a lettuce wrap or in a low-carb tortilla with sour cream, salsa, pico de gallo, and avocado.
When your chicken has been thoroughly picked, it still isn’t finished. Put that carcass in a large pot, cover it with water, and bring to a boil. Add onion tops and bottoms, celery tops, bell pepper tops, and some salt. You’ll have delicious broth after about 30 minutes. Strain it through a colander, and use as a soup base now, or freeze for later.
These are great ways to use leftover rotisserie chicken, and every part of the chicken is used.
