The day is done, the presents were presented, and feasting is finished. Heading into the new year may feel better after a day of detoxifying. So, today I’m making good old Zero Point Soup. Although I learned about this recipe in Weight Watchers, I’ve modified the mixture through the years. Today’s version is probably the best I’ve ever made! Here’s the recipe.
Detox Veggie Soup
Half a red onion, sliced into thin strips
3 celery stalks, chopped small
2 carrots, diced
Red, yellow, and orange bell pepper strips, chopped
Broccoli and cauliflower, chopped into small bits
Cabbage, 2 small heads coarsely chopped
1 quart chicken or turkey broth
16 oz salsa
2T Olive oil
In a large stock pot, saute onions, celery, carrots, and peppers in olive oil on high heat until onions are translucent. Add all other veggies into the pot. Pour in broth and salsa. Bring to a simmer on medium heat, and cook for 20 minutes. Add salt, pepper, basil, and cilantro – to taste.
I make this soup every time we have a dinner with raw veggies and dip, because there are always leftovers! Get creative and try different combinations of veggies and spices. Give it an Asian flare by adding ginger, soy sauce, and snow peas. Go Mexican by adding Rotel tomatoes with green chiles and jalapenos. Go Cajun by adding some okra and Cajun spices. Think of all the possibilities! Simple, healthy foods don’t need to be boring!
This hearty stew has wonderful flavor from all the ingredients, and is very filling. Use it as the focal point on soup night or as a detox soup for a day or weekend. None of these ingredients is high in calories or carbs, making this the perfect, guilt-free food to kick off your healthy eating plan for the new year! Enjoy!
