I love the way I feel eating low carb, high fat, keto-friendly meals. However, sometimes I get tired of boiled eggs, and I want something a little fancier for breakfast.
Keto “omelette kits” are chopped veggies stored in the freezer–just enough for a one-egg omelette–in snack-size zipper bags. When you want an omelette, you heat up a skillet, put butter or olive oil in it, saute the frozen veggies from one of the kits, and pour a scrambled egg in. Flip, add shredded cheese, then roll and serve!
Here are some possible combinations for your kits:
Spinach, red onion, & mushroom
Broccoli, orange pepper, & red onion
Green onion snips, yellow pepper, mushrooms
Get creative! Chop the veggies really small, so they cook quickly. Put about 2 T in each snack bag. I keep a box in the freezer to hold the kits to keep organized.
Try different cheeses on your omelettes for variety!
